Cup cake / Brownie with Ragi(Finger) or Pearl Millet(Kambu) Flour

Ingredients needed:

1 cup - Ragi(Finger Millet) flour or Pearl Millet flour

1 ¼ cup - Sugar/jaggery/honey/Maple syrup

½ cup - Vegetable oil/Avocado oil

½ Teaspoon - Baking soda

½ to 1 Teaspoon - Vanilla essence (optional)

2 to 4 Tablespoon - Cocoa powder (2 to 3 tablespoon for cupcake, 4 tablespoon for brownie)

1 pinch of salt

2 eggs 

Method to Make:

1.Preheat the oven to 370 fahrenheit

2.Grease the pan/tray or cup cake mold baking tray with oil or butter also sprinkle little flour so that the batter does not stick to the surface in which we are baking

3.In a mixing bowl add the 2 eggs beat them up

4.Add the sugar beat them up until it dissolves

5.Add vegetable oil and vanilla essence blend them up

6.Into a flour sieve or strainer add 1 cup of flour, baking soda,salt and cocoa powder

7.Mix the dry and wet ingredients using cut and fold method

8. Pour the batter into the pan/tray or cup cake mold

9.Bake it for 12 to 15 min check in between as oven temperature may vary

10.Cool them for 10 min in a cooling rack 

11.Delicious cupcakes/Brownie are ready to be served and enjoyed

Tips:

1.Add walnuts/almonds/cashew nuts of your choice to the recipe if you are not allergic to nuts 

2.Add little honey to the recipe which will enhance the taste 

3.Add ½ more cup sugar if you like to balance the sweetness

4.For vegan and vegetarian option add yogurt or coconut oil instead of eggs
